Hello readers!! You guys have been loving my 20 minute mid week heroes, which is understandable as they are great to have in the back pocket, only require a handful of fresh ingredients to make a flavour bomb meal and absolute lifesavers in the scorching London heat!

This bean dish might be my new favourite - which is saying a lot as I love beans and eat them consistently. But it’s cheesey, creamy, lightly spiced with za’atar and aleppo pepper and has that salty but fresh feta and herby topping that just melts into the sauce.

If you can get good jarred beans here you won’t regret it - I use Bold Bean as they are honestly the best. Don’t be put off by any mushy beans at the bottom of the jar, these just add to the overall creaminess and give that starchy quality that thickens the sauce into luscious velvet. (Are you salivating yet?)

This recipe makes the most of asparagus which is at the end of the season but really works in this dish, paired with caramelised leeks, peppery rocket and lots of fresh herbs to really elevate it into a summers dream!

Serves 3 as a main, 4 as a side
